PARTY CHEESE BALL
2 pkg. (8 oz. each) Neufchatel Cheese, softened
1/2 cup shredded sharp cheddar cheese
1 Tbsp. finely chopped red peppers
1 Tbsp. finely chopped green onions
2 tsp. dijon mustard
1/2 cup finely chopped fresh parsley
12 stalks celery, cut crosswise into quarters
Crackers
Beat Neufchatel and cheddar in small bowl with mixer until well blended. Add peppers, onions and mustard; mix well. Refrigerate 1 hour. Shape into ball; roll in parsley. Serve with celery and crackers. Makes 24 servings.
